Step 1: Preheat oven to 350 degrees. Grease a 2 quart covered baking dish.
Step 2: Cook macaroni in salted water per package directions, drain. Meanwhile, cut cheese into small 1/2" cubes
Step 3: Melt butter in heavy saucepan over medium heat. Whisk in flour and cook until the roux (butter and flour) turns a light, golden color, 5-7 minutes.
Step 4: Add milk, a little at a time, increasing the heat to medium-high and whisking continually until sauce thickens to desired consistency.
Step 5: Remove from heat and season with salt, pepper and nutmeg. Taste and adjust seasoning.
Step 6: Stir cheese to cooled macaroni, then transfer to baking dish and pour white sauce over pasta. Bake, covered, for 40-50 minutes or until done.
