Step 1

Preheat oven to 375°F.

Step 2

Cut meatballs in half; set aside.

Step 3

Pull each biscuit apart into 2 discs, making 16 total. Flatten each slightly with palms and place on 2 ungreased baking sheets. Top each disc with 1 tablespoon sauce, about 1 1/2 tablespoons cheese, then 2 meatball halves.

Step 4

Bake 15 minutes, until cheese is melted and slightly browned, and meatballs reach a safe internal temperature of 160°F.

Step 5

Serve, refrigerating any leftovers.

These came out really good with thumbs up from the family. Followed all as directed, except that I totally missed an important part – didn’t realize that biscuits were supposed to be used. Instead, I bought king size English muffins. To myself, I said “what the heck, how did that happen”. Well, I guess I didn’t read it carefully, but they came out great regardless, but am curious on the biscuits. Sorry about the mishap, Teresa. I also used homemade meatballs that were delish! Thank you, Teresa, for this easy dish, especially helpful for a weeknight.
