Step 1

In a large micro-wave safe glass bowl, heat butter for 50 seconds on high or until the butter is melted.

Step 2

Whisk together the butter, flour and milk.

Step 3

Add shredded cheddar cheese, adjusting amount to how thick you like it.

Step 4

Place bowl in microwave and cook on high for 1 1/2-2 minutes, whisking every 30 seconds or so, until sauce is thick and heated through.

Step 5

Season with salt, if desired, and whisk until blended.

Except for cutting back on the butter just a fraction ~ I followed this recipe exactly as written, although I did halve the recipe. I really love this, I always do my cheese sauce in the microwave, but always made it by memory, although never used butter before. I really did like the addition of the butter (and will not cut back next time), which made for a richer cheese sauce, so I will be making it with butter every time now. A winner for this family, as we all enjoyed it with our roast dinner.

This recipe was made on 7/18/13 for the " Vermont Cheesemakers "Festival " potion of the " Summer Vacation Tour " in the Games Forum. I followed the recipe as it was except,it was made on the stovetop. A "Quality Control Taste "was done and felt it needed a bit of pepper added to it. I think this is a very good basic cheese sauce and I can see it being used for lots of other vegetables. Thanks for posting and," Keep Smiling :) "
