Step by Step Method

Step 1

Combine beef and half the seasoning in a bowl and spray with oil.

Step 2

Heat a frying pan over moderate heat and add beef, onion and capsicum and cook and stir for 4 minutes or until browned and then transfer to a heatproof bowl.

Step 3

Add beans and remaining seasoning to the pan and cook and stir for 3 minutes, mashing up beans with the back of the spoon, until heated.

Step 4

Return beef mixture to pan and cook and stir for 2 minutes or until heated and combined.

Step 5

Pace tortillas on a flat work bench and top with the beef mixture, cheese, sour cream and coriander and then fold tortillas to enclose filling and enjoy.

These fajitas came out very tasty...I made the whole recipe and I have 2 servings leftover...the hubby ate his like a normal fajita with the tortilla on the side...I ate mine like the recipe suggested...the leftovers are going to be made into chimichangas and cooked in the air fryer...made for "WOTM" tag game...thanks for sharing your recipe Pat...
