Ingredients

The ingredients are:
  • 400 grams beef rump (steak, fat trimmed and thinly sliced)
  • 1 packet (35 gram) taco seasoning mix
  • 1 red onion, cut into thin wedges
  • 1 red capsicum, thinly sliced
  • 1 can (400 gram) red kidney beans (rinsed)
  • 120 grams flour tortillas (heated to serve, 8 small light tortillas)
  • 2/3 cup low-fat cheddar cheese, grated
  • 1/2 cup low-fat sour cream (extra-light)
  • 1/2 cup coriander leaves

How to Make

  • Step 1: Combine beef and half the seasoning in a bowl and spray with oil.

  • Step 2: Heat a frying pan over moderate heat and add beef, onion and capsicum and cook and stir for 4 minutes or until browned and then transfer to a heatproof bowl.

  • Step 3: Add beans and remaining seasoning to the pan and cook and stir for 3 minutes, mashing up beans with the back of the spoon, until heated.

  • Step 4: Return beef mixture to pan and cook and stir for 2 minutes or until heated and combined.

  • Step 5: Pace tortillas on a flat work bench and top with the beef mixture, cheese, sour cream and coriander and then fold tortillas to enclose filling and enjoy.
