Step 1: Combine beef and half the seasoning in a bowl and spray with oil.
Step 2: Heat a frying pan over moderate heat and add beef, onion and capsicum and cook and stir for 4 minutes or until browned and then transfer to a heatproof bowl.
Step 3: Add beans and remaining seasoning to the pan and cook and stir for 3 minutes, mashing up beans with the back of the spoon, until heated.
Step 4: Return beef mixture to pan and cook and stir for 2 minutes or until heated and combined.
Step 5: Pace tortillas on a flat work bench and top with the beef mixture, cheese, sour cream and coriander and then fold tortillas to enclose filling and enjoy.
