"I would normally make this with uncooked chicken cut in pieces and sauteed with the garlic, but I did not plan ahead and did not remember to thaw the chicken! So I poached frozen chicken breasts until almost done and added the cut up cubes to the sauce to simmer and finish cooking. Lots of flavor here, especially since I used Mediterranean Herb feta cheese."

Step by Step Method

Step 1

Cook pasta al dente according to package directions.

Step 2

While it's cooking, briefly saute garlic in olive oil; add chicken, tomatoes and tomato sauce, olives, and spices. Bring to boil and simmer 10 minutes.

Step 3

Drain pasta, reserving some of the cooking liquid. Add pasta to chicken mixture; stir to combine. Simmer for 15 minutes, adding pasta cooking liquid if necessary.

Step 4

Sprinkle feta cheese on top.
