Step by Step Method

Step 1

Pat the fish fillet dry with a paper towel and place it skin side down on a baking sheet coated with non-stick spray; sprinkle with salt and pepper.

Step 2

Mix the remaining ingredients together.

Step 3

Rub this mixture over the fish fillet with the back of a spoon.

Step 4

Bake the fish in a preheated 400 degree Fahrenheit oven for 15 minutes or until fish starts to flake when poked with a fork in the thickest part of the fillet.

What tasty, simple fish! I did make a couple of changes; I used tilapia instead of rainbow trout, skipped the salt, and added 1/2 teaspoon dried dill to the mayo mixture. Definitely one I'll be using again! I think it would be good on roasted artichoke hearts and/or Brussels sprouts, too.
