"Instead of the usual fresh basil, these tomatoes are made with fresh summer savory. If you cannot find fresh savory, fresh thyme works. Dried savory will work in a pinch (use 1/4 teaspoon). Cook time is marination time."

Step by Step Method

Step 1

Cut each tomato into 4 to 6 wedges.

Step 2

Place the tomato wedges in a medium bowl.

Step 3

Combine lemon juice and remaining ingredients, stirring with a whisk.

Step 4

Pour marinade over tomatoes; toss gently to coat. Let stand 1 hour, stirring occasionally.

Step 5

Using a slotted spoon, serve wedges on a bed of greens.

I used Roma tomatoes and dried basil, as I was not able to get fresh savory. This recipe really perked up winter tomatoes! Will be made many more times this year. Thank you for sharing!
