"I found this on a Ralph's grocery store recipe card. I LOVE hearts of palm! I think mushrooms, olives and onions would be great in this also. And I'll probably try it with tuna, and I bet it would be good with salami too! Oooh...and I'll be topping mine with feta. Yum! Posted for the You Want What?! recipe posting game."

Step by Step Method

Step 1

In a small bowl, whisk together garlic, olive oil, vinegar, mustard and salt and pepper to taste.

Step 2

In a large salad bowl, combine hearts of palm, artichokes, tomatoes and parsley.

Step 3

Pour dressing over hearts of palm mixture, tossing to coat.

Step 4

Cover and chill 30 minutes.

Step 5

Spoon marinated mixture over greens and serve.

Love hearts of palm, so knew this would be a winner for us. The marinating gives them extra flavor. It came out really yummy, and I like your ideas of additions for next time.
