Ingredients

The ingredients are:
  • 1 to 2 garlic cloves, minced
  • 1/3 cup olive oil (extra virgin)
  • 1/4 cup white wine vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste
  • 2 jars (28 ounces) hearts of palm (drained and sliced into 1/2-inch rings, 14 ounce each)
  • 2 cans (28 ounces) artichoke hearts (drained and quartered, 14 ounce each can)
  • 1 pint grape tomatoes (halved)
  • 1/4 cup fresh flat-leaf parsley, chopped
  • 4 cups mesclun (or arugula)

How to Make

  • Step 1: In a small bowl, whisk together garlic, olive oil, vinegar, mustard and salt and pepper to taste.

  • Step 2: In a large salad bowl, combine hearts of palm, artichokes, tomatoes and parsley.

  • Step 3: Pour dressing over hearts of palm mixture, tossing to coat.

  • Step 4: Cover and chill 30 minutes.

  • Step 5: Spoon marinated mixture over greens and serve.
