Step 1

Cook pasta according to package instructions, omitting salt; add broccoli during the last 5 minutes of cooking time, drain and return to pan.

Step 2

Meanwhile, melt margarine in medium saucepan over medium head; add flour, salt and pepper; cook and stir 1 minute. Stir in milk; bring to boil over medium high heat, stirring frequently. Reduce heat and simmer 2 minutes; remove from heat; gradually stir in cheese until melted. Add sauce to pasta and broccoli, stir until blended.

This is about as low fat & calories as you can make Mac & Cheese and still taste darn good. I cut the recipe in half with no problems.

This recipe was made on 7/3/13 for the " Cheese Festival " portion of the " Summer Vacation Tour " in the Games forum.Since there was just two of us,the recipe was cut in half.Also I didn't use reduced fat ingredients.After making everything on the stove, and baked it for a few minutes in the oven to give it a little bit of a crusty top.It was a very easy recipe to make. My SO and I really enjoyed the taste. If your looking for a very good " Comfort Food "side dish,this is it. :)
