"Working out some leftover roast chicken and was going to have to steam some rice for stir-fry later today, I made this soup for lunch. Kind of reminds of avgolemono with a chicken rice soup twist."

Step by Step Method
Step 1
Saute the onion, carrot, celery and garlic in oil in the large saucepan until vegetables soften.
Step 2
Add remaining ingredients except yogurt and cook about ten minutes to incorporate flavors.
Step 3
Left cool a few minutes then whisk in yogurt before serving.
