  • 1 tablespoon olive oil
  • 3/4 cup chopped onion
  • 1 rib celery, diced
  • 1 carrot, diced
  • 2 teaspoons minced garlic
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dill weed
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups chicken broth
  • 2 lemons, juice only/discard rinds
  • 1 tablespoon chopped fresh Italian parsley
  • 4 cups chopped cooked chicken
  • 2 cups hot cooked rice
  • 2 tablespoons plain yogurt

How to Make

  • Step 1: Saute the onion, carrot, celery and garlic in oil in the large saucepan until vegetables soften.
