Step by Step Method

Step 1

Finely chop the jalapenos. Set aside.

Step 2

Cook the garlic in hot oil in a large non-stick skillet over medium heat, stirring constantly, for 2 to 3 minutes or until golden.

Step 3

Add peppers to the garlic, and cook, stirring constantly, for 1 minute.

Step 4

Add chopped plum tomatoes and kosher salt; cook 3 minutes or until thoroughly heated. Stir in your desired amount of fresh basil. Serve immediately over hot pasta. Sprinkle with Parmesan cheese.

I scaled back for one serve and made using dry basil as it was bucketing down rain so could not go to the herb garden to pick fresh and used 4 Roma/Plum tomatoes which came to just over a pound and there was way to much for me so will only use 3 tomatoes in future and I used 3 ounces of tubular spaghetti as this a serving size for me, I also let the tomatoes cook a bit longer to as the develop a sauce and just pulled the pasta out of the boiling water with tongs and mixed into the spaghetti into the sauce using a little of the pasta water to bring it together then served it up with a good amount of parmesan and a delicious dinner was had and the pasta water took long to come up to a boil than it was to prep and cook all done in the 9 minutes it took to cook the pasta with prep taking place while the water came up to a boil.
