  • 4 jalapeno peppers, seeds removed
  • 6 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 pounds plum tomatoes (8 tomatoes, chopped)
  • 1/2 teaspoon kosher salt
  • 1/3 to 1/2 cup fresh basil, chopped
  • 1 package (8 ounce) dry spaghetti (or vermicelli, cooked)
  • Parmesan cheese, freshly grated

How to Make

  • Step 1: Finely chop the jalapenos. Set aside.

  • Step 2: Cook the garlic in hot oil in a large non-stick skillet over medium heat, stirring constantly, for 2 to 3 minutes or until golden.

  • Step 3: Add peppers to the garlic, and cook, stirring constantly, for 1 minute.

  • Step 4: Add chopped plum tomatoes and kosher salt; cook 3 minutes or until thoroughly heated. Stir in your desired amount of fresh basil. Serve immediately over hot pasta. Sprinkle with Parmesan cheese.
