Lamington Cheesecake Ice-Cream Slice

Step by Step Method
Step 1
Grease and line a 19cm x 30cm lamington pan with baking paper, extending paper 4cm above pan edges.
Step 2
Place ice-cream in a large bowl and stand at room temperature for about 10 minutes, or until softened.
Step 3
Meanwhile, chop lamingtons into 2cm pieces.
Step 4
Process cream cheese and sugar in a food processor until smooth and then add ice-cream and process until combined and then transfer to a large bowl and stir in lamingtons and then spoon into prepared pan and smooth over top.
Step 5
Stir jam in a bowl until smooth and dollop over ice-cream mixture and using a small palette knife, gently swirl through ice-cream mixture and sprinkle with coconut and freeze, covered, overnight.
Step 6
To serve, lift frozen slice out of pan and cut into rectangles.

- Lamington fingers are available in the bakery section of major supermarkets.
- Slice can be made up to four days ahead.
