"A lovely Japanese Salad to serve as a side. You can toast the sesame seed before using if preferred, you can also add a little bit more sugar for added sweetness if preferred, and chili is optional. NOTE: To toast sesame seeds, heat a small dry skillet over low heat then add the sesame seeds stirring constantly until sesame seeds are just golden in color and fragrant ~ this only takes about 2 minutes. Transfer to a dish or bowl and let cool."

Step by Step Method
Step 1
Place the sugar, soy sauce, rice wine vinegar, sesame oil and chili flakes (chili if using) in a bowl & whisk the ingredients together well.
Step 2
Season the sliced cucumber with salt and pepper to taste and then pour the dressing on to the cucumbers and toss to combine.
Step 3
Sprinkle in the sesame seeds toss through again. (See note in description for toasted)
Step 4
Allow the cucumber mix to sit for 20 minutes before serving.
