"I found this recipe on the site "Slender Kitchen" and have only slightly modified it. Very tasty healthy recipe. One serving is 4 nice sized meatballs. After baking and while the meatballs are still hot roll them in 1/2 cup your favorite BBQ sauce before serving. If you wish you may make small meatballs and serve them as an appetizer - increase the amount of BBQ sauce that you roll them in. If the meat mixture is a bit loose just add 3 tablespoon of Panko crumbs"

Step by Step Method

Step 1

Preheat oven to 425F, cover a baking sheet with "Release" foil or use regular foil and lightly spray with oil

Step 2

Mix together all the ingredients and form into 16 meatballs

Step 3

Place on prepared pan and bake for 20-25 minutes until they are completely cooked internal temp 165f

I got 20 of them, not real big and not really an appetizer size...the hubby walked by and took one...well...that's OK there's just two of us...so I told him it was suppose to have BBQ sauce with it...he felt that a Thai sauce would be good...so I put on my thinking cap and decided to serve them with ""Roasted Pineapple and Habanero Sauce" from Costco...delicious...I had these meatballs cooked...and ready to reheat in enough time to serve with our other appy's...I have the rest frozen for another time...made for "Bill Board" tag game...

These are tasty meatballs I served up with your bit of spice sweet potato recipe. These two complimented each other perfectly. I did not add BBQ sauce to these as they tasted great without it. I did have to add a bit of oat flour as the mixture was too loose, 3 tablespoons did the trick.
