Step by Step Method

Step 1

Preheat oven to 400 degrees F.

Step 2

Combine the flour, cornmeal, sugar, baking powder and salt in a large bowl.

Add the tomatoes, basil and oregano and toss to mix.

Mix the milk, olive oil and egg in a medium bowl.

Step 5

Add to the flour mixture stirring just until moistened.

Step 6

Spoon half the batter into nonstick muffin cups.

Step 7

Top each with 1 cheese cube.

Step 8

Cover with the remaining batter.

Step 9

Bake at 400 degrees for 20 to 25 minutes or until the muffins test done.

Step 10

Let stand for 5 minutes.

Step 11

Serve warm.
