  • 1 1/2 cups flour
  • 1/2 cup yellow cornmeal
  • 2 tablespoons sugar
  • 1 tablespoons baking powder
  • 1 teaspoon salt
  • 2 plum tomatoes, seeded, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 teaspoon dried oregano
  • 1 cup milk
  • 1/4 cup extra virgin olive oil
  • 1 egg, lightly beaten
  • 2 ounces mozzarella cheese, (12 (3/4-inch) cubes)

How to Make

  • Step 1: Preheat oven to 400 degrees F.

  • Step 2: Combine the flour, cornmeal, sugar, baking powder and salt in a large bowl.

  • Step 3: Add the tomatoes, basil and oregano and toss to mix.

  • Step 4: Mix the milk, olive oil and egg in a medium bowl.

  • Step 5: Add to the flour mixture stirring just until moistened.

  • Step 6: Spoon half the batter into nonstick muffin cups.

  • Step 7: Top each with 1 cheese cube.

  • Step 8: Cover with the remaining batter.

  • Step 9: Bake at 400 degrees for 20 to 25 minutes or until the muffins test done.

  • Step 10: Let stand for 5 minutes.

  • Step 11: Serve warm.
