Step by Step Method

Step 1

Chop the bacon into small pieces.

Step 2

In a dry hot wok fry the bacon until crispy.

Step 3

Remove the bacon to a bowl for later.

Step 4

Save all but 1 tablespoon grease and heat remaining grease to smoke point.

Step 5

Add the rice to the wok, stir immediately and continuously .

Step 6

Add back in the bacon keep the rice moving.

Step 7

Make a well in the centre of the rice and crack in the egg.

Step 8

Scramble the egg immediately and stir into the rice and bacon.

Step 9

Add the spring onion and sesame oil.

Step 10

Season to taste

We really liked this a lot! I had thick cut bacon that I baked in the oven and cut up later to add to the rice. My left-over rice had some chopped up peppers and onions. I loved that even though it was billed as Irish, it still had sesame oil - that really put it over the top! Yum! DH loved it, too!
