Step 1: Chop the bacon into small pieces.
Step 2: In a dry hot wok fry the bacon until crispy.
Step 3: Remove the bacon to a bowl for later.
Step 4: Save all but 1 tablespoon grease and heat remaining grease to smoke point.
Step 5: Add the rice to the wok, stir immediately and continuously .
Step 6: Add back in the bacon keep the rice moving.
Step 7: Make a well in the centre of the rice and crack in the egg.
Step 8: Scramble the egg immediately and stir into the rice and bacon.
Step 9: Add the spring onion and sesame oil.
Step 10: Season to taste
