"Another Jeremy Vincent find. This is such a wonderful pudding on a cold winter's night. A delicious take on the old baked apple. I added 1/4 teaspoon ground nutmeg, with the cinnamon to this recipe but have posted the recipe as written. It may not be the prettiest of dessert but when it came to flavour we just loved it. I also served with ice cream, just divine!"

Step by Step Method

Step 1

Heat the oven to 180C. Combine the raisins, walnuts, sugar, rum and salt in a bowl; set aside.

Step 2

Core the apples and place right-side up in individual ramekins or baking dishes.

Step 3

Fill each apple with ¼ cup of the walnut mixture and divide the wine, pouring it over the top of each apple.

Step 4

Dot each apple with 1 tablespoon of butter and a drizzle of honey, cover tightly with foil, and bake until apples are tender (about 1 hour and 15 minutes).

Step 5

When the apples have softened completely, sprinkle with cinnamon and let cool slightly before serving in the ramekins with a generous topping of cream.

Tips


  • Note: You will need six ramekins or similar sized dishes that can each hold an apple snugly and upright.

Oh goodness, is this ever good! The sauce is phenomenal and provides so much yummy goodness to the apples. This dish was screaming to be had with some vanilla ice cream, which we didn’t have, but made sure to save 3 of the apples to have it with some of the ice cream tomorrow. I misread the recipe and sprinkled the cinnamon before placing it in the oven, but we loved the cinnamony goodness and I don’t think I would change it. It’s a perfect autumn recipe. Loved it. Thank you, Tisme, for sharing. Made it for Billboard tag.

I made the full serving of these yummy apples and sent 2 home with my son and saved 2 for myself. They were so delicious served with rum raisin ice cream!

We loved this...it was a bit on the sweet side for us so next time I'll cut back on either the sugar or the honey...I baked mine in my apple bakers...hubby topped his with ice cream and used whipped cream...was sure about the rum and the wine...but it worked...made for "Pick Me" tag game...

The only change I made was to use sultanas instead of raisins and I used a granny smith apple and scaled back for 2 serves and still have some apple filling over enough for at least 1 more apple. Thank you Tisme made for Pick Me tag game.
