Step by Step Method
Step 1
Combine 1 tablespoon oil, honey, mustard, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a small bowl.

Pat the chicken dry with a paper towel. Add the chicken to the honey mixture; toss to coat.
Step 3
Heat a large skillet over medium-high heat. Add 4 chicken cutlets to the pan; cook 3 minutes on each side or until done, Repeat the procedure with the remaining 4 cutlets.
Step 4
Combine the remaining 2 tablespoons oil, remaining 1/2 teaspoon salt, remaining 1/4 teaspoon pepper, and vinegar in a medium bowl. Add tomatoes and remaining ingredients. Toss. Serve with the chicken.
