Step by Step Method
Step 1
Preheat oven to 190C.
Step 2
Mix tghe herbs together in a large bowl with the garlic, lemon rind and juice, olive oil and salt and then add the chicken and toss to coat well.
Step 3
Put chicken, skin side up, on a wire rack placed over a roasting tray and roast for about 30 to 40 minutes, or until crispy and cooked through.
Step 4
Serve the chicken with steamed vegetables or a salad.
