Ingredients

The ingredients are:
  • 1 tablespoon thyme leaves, heaped and chopped
  • 1 tablespoon rosemary leaves, heaped and chopped
  • 1 tablespoon marjoram leaves, heaped and chopped or oregano leaves
  • 6 garlic cloves, minced
  • 1 lemon, finely grated rind and juice
  • 60 ml olive oil
  • 1 teaspoon sea salt
  • 1 kilogram chicken thighs (skin on and bone in 8 thighs required)

How to Make

  • Step 1: Preheat oven to 190C.

  • Step 2: Mix tghe herbs together in a large bowl with the garlic, lemon rind and juice, olive oil and salt and then add the chicken and toss to coat well.

  • Step 3: Put chicken, skin side up, on a wire rack placed over a roasting tray and roast for about 30 to 40 minutes, or until crispy and cooked through.

  • Step 4: Serve the chicken with steamed vegetables or a salad.
