Step by Step Method

Step 1

Preheat oven to 425°F. Coat a baking sheet with spray.

Step 2

Slice mushrooms into 1/2 inch wide strips. Discard stems and gills (dark brown layers).

Step 3

In a shallow bowl, whisk eggs until frothy. Combine the bread crumbs and cheese in a zip-top bag, or in a shallow bowl.

Step 4

Place 3–4 mushrooms strips into eggs, turning to coat completely. Dip or toss mushrooms in bread crumbs until evenly coated, placing the coated strips in single layer on the baking sheet. When all the mushrooms are on the sheet, spritz the mushrooms with cooking spray and season with herb seasoning. Bake 10 minutes.

Step 5

Turn mushrooms and bake 5–7 more minutes or until tender and golden. Serve with ranch dressing or the dipping sauce ofyoru choice.

What a great side and such a nice change from the regular fries/chips, I halved the recipe for two of us and we ended up with some left over but they were a wonderful with our steak and salad. I used cheddar cheese due to the DH's loathing of parmesan but next time I will make them just for me and I will use parmesan because I love it and will remember to add the herbed seasoning but even without it they were a delight to eat and had a nice slight crisp to them, thank you JostLori made for For Your Consideration tag game at FF&F.
