Ingredients

  • 12 ounces portabella mushrooms
  • 2 eggs (or ½ cup egg whites)
  • 1 cup panko bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • ¼ teaspoon garlic-herb seasoning (salt-free if possible)

How to Make

  • Step 1: Preheat oven to 425°F. Coat a baking sheet with spray.

  • Step 2: Slice mushrooms into 1/2 inch wide strips. Discard stems and gills (dark brown layers).

  • Step 3: In a shallow bowl, whisk eggs until frothy. Combine the bread crumbs and cheese in a zip-top bag, or in a shallow bowl.

  • Step 4: Place 3–4 mushrooms strips into eggs, turning to coat completely. Dip or toss mushrooms in bread crumbs until evenly coated, placing the coated strips in single layer on the baking sheet. When all the mushrooms are on the sheet, spritz the mushrooms with cooking spray and season with herb seasoning. Bake 10 minutes.

  • Step 5: Turn mushrooms and bake 5–7 more minutes or until tender and golden. Serve with ranch dressing or the dipping sauce ofyoru choice.
