Step by Step Method

Step 1

Melt butter in a soup pot. Add onion and curry powder and stir cook over medium heat until onions are softened. Stir in potatoes, carrots, celery, oregano, parsley, chicken and chicken stock. Bring to a boil, then reduce heat and simmer until the potatoes are tender (about 20 minutes).

Step 2

Mix evaporated milk and flour until free of lumps. Pour into soup and stir cook until slightly thickened. Add salt and pepper to taste.

LOVED this chicken soup! Made for our lunch, plans were to freeze some for later. Didn't make it to the freezer - so good the two of us polished it off for lunch the next day! Like having homemade soup in the fridge for quick weekend lunches, adding your Chicken Soup to the rotation for sure. Recipe printed and close at hand to make another pot this Friday. Other than sautéing fresh chicken breasts and using half and half because I didn't happen to have cooked chicken or condensed on hand I made as posted resulting in one super soup.
