"My friend passed this along to me a few years ago. She adds a pinch of curry powder to hers, which isn't bad; but, I'm not a big curry fan - so, I prefer, a little extra fresh herbs, and a squeeze of fresh lemon. Versions of this recipe can be found on many different food sites and blogs. This is her version. Remember those classic party breads (the ones, 2x2" and very thin); I love to serve this spread with those. It is also fantastic on a multi-grain bread as a sandwich, crackers, or fill a pita. Grill flat bread; then top with the spread, baby spinach or arugula, and fresh tomato slices - Delicious and healthy."

Step by Step Method

Step 1

Vegetables ... The secret to this dish, is really to chop everything the same size. A small dice is really what works best for this recipe.

Step 2

Cucumber ... First, after, peeling and dicing the cucumber, set on a paper towel to drain. This will just absorb any excess water/moisture. You don't want to end up with a WET dish.

Step 3

Spread ... First, you are making a healthy fresh recipe; so, try to use a good quality, fresh cottage cheese. I usually will hit my local Whole Foods, or any fresh market to get the best possible. It really does make a difference.

Step 4

Then, add all the ingredients to a bowl and mix to combine. Season with salt and pepper to taste. Wrap with plastic wrap and refrigerate 30 minutes to 1 hour before serving.

Step 5

Serve ... As I said, this is fantastic on crackers, triscuits are a favorite; party breads (pumpernickel, I think is the best), or whole grain breads as a sandwich. Pita bread is also delicious - add tomato, and fresh greens for a fantastic healthy sandwich. Or, for a morning treat - spread on a bagel slice.
