Ingredients

The ingredients are:
  • 2 cups cottage cheese (fresh small curd cottage cheese I prefer to get a fresh organic brand if possible, but not necessary)
  • 2/3 cup bell pepper green fine chopped)
  • 1/2 cup bell pepper (orange or yellow bell pepper, fine chopped)
  • 1/4 cup pimentos, chopped
  • 3 scallions, diced (white and green parts)
  • 1 teaspoon garlic, minced
  • 1 tablespoon jalapeno pepper, minced (seeds and ribs removed)
  • 1/4 cup cucumber, peeled seeded and diced
  • 1 teaspoon fresh lemon juice
  • Dash hot sauce (I used Crystal, but any brand will work)
  • 1 1/2 teaspoons white wine vinegar (a rice vinegar can also be used)
  • 1 tablespoon fresh basil, minced
  • 1/2 tablespoon fresh dill, minced (more if you like dill)
  • 1/2 to 1 tablespoon fresh parsley, minced
  • Salt to taste
  • Pepper to taste

How to Make

  • Step 1: Vegetables ... The secret to this dish, is really to chop everything the same size. A small dice is really what works best for this recipe.

  • Step 2: Cucumber ... First, after, peeling and dicing the cucumber, set on a paper towel to drain. This will just absorb any excess water/moisture. You don't want to end up with a WET dish.

  • Step 3: Spread ... First, you are making a healthy fresh recipe; so, try to use a good quality, fresh cottage cheese. I usually will hit my local Whole Foods, or any fresh market to get the best possible. It really does make a difference.

  • Step 4: Then, add all the ingredients to a bowl and mix to combine. Season with salt and pepper to taste. Wrap with plastic wrap and refrigerate 30 minutes to 1 hour before serving.

  • Step 5: Serve ... As I said, this is fantastic on crackers, triscuits are a favorite; party breads (pumpernickel, I think is the best), or whole grain breads as a sandwich. Pita bread is also delicious - add tomato, and fresh greens for a fantastic healthy sandwich. Or, for a morning treat - spread on a bagel slice.
