Step 1: Vegetables ... The secret to this dish, is really to chop everything the same size. A small dice is really what works best for this recipe.
Step 2: Cucumber ... First, after, peeling and dicing the cucumber, set on a paper towel to drain. This will just absorb any excess water/moisture. You don't want to end up with a WET dish.
Step 3: Spread ... First, you are making a healthy fresh recipe; so, try to use a good quality, fresh cottage cheese. I usually will hit my local Whole Foods, or any fresh market to get the best possible. It really does make a difference.
Step 4: Then, add all the ingredients to a bowl and mix to combine. Season with salt and pepper to taste. Wrap with plastic wrap and refrigerate 30 minutes to 1 hour before serving.
Step 5: Serve ... As I said, this is fantastic on crackers, triscuits are a favorite; party breads (pumpernickel, I think is the best), or whole grain breads as a sandwich. Pita bread is also delicious - add tomato, and fresh greens for a fantastic healthy sandwich. Or, for a morning treat - spread on a bagel slice.
