" This is serious comfort food and it is good for you. Looks messy but tastes great. Cut back on the hot sauce if you do not like spicy. I serve this recipe with Tofu pasta but you may serve it with the pasta of your choice. This is a great meal in one pan."

Step by Step Method
Step 1
Heat the oil in a large wok or skillet, add pork and garlic, stir fry until the pork is nicely browned and cooked through, remove and set aside
Step 2
Add carrots to wok and stir fry until the slices are ala dente, remove and place them with the pork
Step 3
If necessary, lightly spray the wok with oil, stir fry the onions and mushrooms until the onions are translucent and the mushrooms are golden
Step 4
Add the tomatoes and black beans, mix well, stir in the ginger and hot sauce,
Step 5
Return the pork and carrots to the wok, mix, cook for 5 minutes,
Step 6
Add broccoli, stir it in, cover and cook for 5 minutes
Step 7
Add enough tomato juice to make a sauce but not swimming.
Step 8
Serve over pasta
