Ingredients

The ingredients are:
  • 1 1/2 pounds pork tenderloin, all fat removed, cut into bite size pieces
  • 1/2 tablespoon olive oil
  • 3 garlic cloves, chopped
  • 2 medium carrots, thinly sliced
  • 1 1/2 cups fresh mushrooms, sliced
  • 1 cup onions, chopped
  • 2 medium tomatoes, chopped
  • 1 (19 ounce) can black beans, drained and rinsed
  • 3 tablespoons hot sauce, your favorite
  • 3 teaspoons fresh ginger, grated
  • 2 cups broccoli, separated into small florets
  • 1/2 cup tomato juice

How to Make

  • Step 1: Heat the oil in a large wok or skillet, add pork and garlic, stir fry until the pork is nicely browned and cooked through, remove and set aside

  • Step 2: Add carrots to wok and stir fry until the slices are ala dente, remove and place them with the pork

  • Step 3: If necessary, lightly spray the wok with oil, stir fry the onions and mushrooms until the onions are translucent and the mushrooms are golden

  • Step 4: Add the tomatoes and black beans, mix well, stir in the ginger and hot sauce,

  • Step 5: Return the pork and carrots to the wok, mix, cook for 5 minutes,

  • Step 6: Add broccoli, stir it in, cover and cook for 5 minutes

  • Step 7: Add enough tomato juice to make a sauce but not swimming.

  • Step 8: Serve over pasta
