Step 1: Heat the oil in a large wok or skillet, add pork and garlic, stir fry until the pork is nicely browned and cooked through, remove and set aside
Step 2: Add carrots to wok and stir fry until the slices are ala dente, remove and place them with the pork
Step 3: If necessary, lightly spray the wok with oil, stir fry the onions and mushrooms until the onions are translucent and the mushrooms are golden
Step 4: Add the tomatoes and black beans, mix well, stir in the ginger and hot sauce,
Step 5: Return the pork and carrots to the wok, mix, cook for 5 minutes,
Step 6: Add broccoli, stir it in, cover and cook for 5 minutes
Step 7: Add enough tomato juice to make a sauce but not swimming.
Step 8: Serve over pasta
