Step 1

Layer ham, roasted red capsicum strips, baby spinach, button mushrooms and Swiss cheese between 2 slices wholemeal grain bread.

Daily Inspiration

Nice panini sandwich. Loved the addition of the spinach and mushrooms with the ham. The red bell pepper seemed a little too overwhelming; therefore, next time I would leave them off. This sandwich made a really nice lunch for us today.

I don't have a press, so I smashed the sandwich with another pot on top, then flipped and smashed again! It worked! I used thin sandwich rounds instead of regular bread.
