"I love omelets and this is one of my favorites. I use sour cream (or cottage cheese), a bit of flour & milk in the omelet but if you have your own favorite way of doing an omelete go right ahead. Your skillet needs a lid."

Step by Step Method

Step 1

Put the eggs, sour cream or cottage cheese, flour and milk in a mini mixer, turn it on for half a minute to really mix the ingredients

Step 2

Mix the remaining ingredients together

Step 3

Lightly spray a 10 inch skillet with oil, set your heat on medium (on my electric stove I set it between 6 and 7) pour in the egg mixture, cover, cook for 3 minutes.

Step 4

Scatter the remaining ingredients over the omelet, cover and cook for 2 more minutes,

Step 5

Flip one side half way into the middle and serve

Lovely amelette thanks !! I used Canadian bacon instead of the ham, needed to use it up and i did use 3 eggs cus I seemed to have a lot of filling. It was plenty for the two of us, have never used flour and milk in my ometettes before , it was quite nice and a little firmer and did take a little longer to cook than what was suggested, but that was probably because of the extra egg and a lot of filling. We enjoyed it !!  Forgot to say i had no chives so i subed with green onion.
