Step by Step Method
Step 1
Have grill medium heat
Step 2
Mix together icing sugar, tequilla, lime zest and lime juice, whisk until smooth
Step 3
Cut the pineapple lengthwise into 8 pieces, core removed if desired
Step 4
Thread each piece onto a wooden, soaked skewer
Step 5
Bruch with coconut oil
Step 6
Sprinkle with brown sugar
Step 7
Grill the pineapple turning once until carmelized, about 2 minutes each side
Step 8
Transfer pineapple to a platter, Sprinkle with the tequilla lime glaze
Step 9
Garnish with mint and serve

- 8 wooden skewers, soaked in water 30 minutes or more
