Step 1: Have grill medium heat
Step 2: Mix together icing sugar, tequilla, lime zest and lime juice, whisk until smooth
Step 3: Cut the pineapple lengthwise into 8 pieces, core removed if desired
Step 4: Thread each piece onto a wooden, soaked skewer
Step 5: Bruch with coconut oil
Step 6: Sprinkle with brown sugar
Step 7: Grill the pineapple turning once until carmelized, about 2 minutes each side
Step 8: Transfer pineapple to a platter, Sprinkle with the tequilla lime glaze
Step 9: Garnish with mint and serve
