  • 1 large whole pineapple (sweet pineapple, trimmed & peeled)
  • 1 cups icing sugar
  • 2 tablespoons tequilla
  • 1/2 teaspoon lime zest
  • 1 tablespoon fresh lime juice
  • 3 tablespoons coconut oil (melted)
  • 3 tablespoon light brown sugar
  • 8 twigs mint leaves, for garnish (optional)

How to Make

  • Step 1: Have grill medium heat

  • Step 2: Mix together icing sugar, tequilla, lime zest and lime juice, whisk until smooth

  • Step 3: Cut the pineapple lengthwise into 8 pieces, core removed if desired

  • Step 4: Thread each piece onto a wooden, soaked skewer

  • Step 5: Bruch with coconut oil

  • Step 6: Sprinkle with brown sugar

  • Step 7: Grill the pineapple turning once until carmelized, about 2 minutes each side

  • Step 8: Transfer pineapple to a platter, Sprinkle with the tequilla lime glaze

  • Step 9: Garnish with mint and serve
