Step by Step Method

Step 1

Place two slices of bread on a cutting board.

Step 2

Divide cheese slices between the two slices of bread then top with sliced tomatoes. Top with the rest of the cheese and then cover with two slices of bread. There will be two sandwiches.

Step 3

Heat a skillet over medium heat and add 2 tablespoons butter until butter melts.

Step 4

Place two sandwiches in the pan and grill until bread is golden brown and cheese starts to melt. Flip sandwiches over and add remaining butter and continue to grill until the other side is browned and toasted.

Step 5

Slice sandwiches in half.

I made one sandwich and marinated tomato slices in olive oil and sprinkled with herbs and left for 24 hours before making the sandwich and used sharp cheddar cheese as that is what I had and assembled the sandwich and cooked as specified though my bread was brown and crispy before the cheese had melted to the ooey gooey stage but still made for a very enjoyable lunch, thank you ellie made for Only The Lonely tag game at FF&F.
