Grilled Cheese & Bacon Sandwiches With Cheese Curds

Step 1

In a small bowl, mash the bouillon cube into 2 teaspoons of hot water until dissolved. Whisk in the mayonnaise and Sriracha and season with salt and pepper.

Step 2

In a medium skillet, heat the oil. Add the onion, cover and cook over medium heat, stirring occasionally, until golden brown and softened, about 10 minutes. Stir in the vinegar and season with salt and pepper.

Step 3

Meanwhile, in another skillet, cook the bacon over medium heat, turning once until crisp, 6 minutes. Drain on paper towels.

Step 4

Set a griddle over 2 burners adn turn the heat to medium. Butter the bread slices on 1 side. Spread the other side of 4 bread slices with the spicy mayonnaise and top with the onion, cheddar, cheese curds, and bacon.

Step 5

Close the sandwiches buttered side out and griddle over moderately low heat until crisp, about 4 minutes per side. Cut the sandwiches in half and serve.

Unfortunately the onions did not get into the sandwich oops they were burnt so made as per recipe scaled back for 1 serve and I grilled it in my snack maker using the panini plates so did not have to butter the outside but the downside is your sandwich gets flattened but gets nice a crispy toasted and I really enjoyed for lunch and almost thinking about making another but have have portion control. Also could not buy cheese curds but a google search came up with ricotta as a sub. so used that. Thank you breezermom made for Alphabet Tag Game at FF&F.
