"Lovely flavor. Not the best photo- I will try to get another one during grilling season. This is really good with any sort of grilled item, like grilled fish, steak, or marinated chicken breasts. Serve with couscous for a quick and easy side dish- if your tomatoes are juicy you can lay the veggies on the couscous after it's cooked and it will flavor it up. Step by Step Method
Step 1
Place zucchini and squash in a mixing bowl and drizzle with 1 tablespoons oil, and sprinkle with salt and black pepper and pepper flakes.
Step 2
Toss squash like salad until it is evenly coated.
Step 3
Place radicchio on top of squash and drizzle cut sides lightly with olive oil and balsamic, then toss vegetables again, adding a little more balsamic if needed.
Step 4
Skewer vegetables and grill for 8 minutes, turning frequently, or until vegetables are tender.
Step 5
Sprinkle lightly with Parmesan cheese before serving if desired.
