Step 1

Combine Cheddar cheese, apple, olives, and mayonnaise in a medium bowl, and stir well.

Step 2

Spread cheese mixture evenly on 1 side of 4 slices of bread to within 1/4-inch of edges.

Step 3

Top with remaining bread slices; brush top slices of bread with melted butter, and invert onto a hot griddle. Immediately brush other sides of sandwiches with melted butter; cook over medium heat until golden.

Step 4

Turn sandwiches, and brown other sides.

What a treat. Wow, was this good. So much flavor, great textures. A real taste experience. I used a nice homemade white bread, it held up well. It toasted perfectly and everything blended together perfectly. I scaled down for one, it was quick and easy to make with excellent results. Made as written but used an old white cheddar, what I had on hand. Thanks for sharing another winner Fem.

What a great sandwich this was for lunch though I served in herbed ciabatta roll and I did omit the olives as I not over fond of them but the rest was thoroughly enjoyed. Thank you ForeverMama, made for For Your Consideration tag game at FF&F.
