Step by Step Method

Step 1

Preheat oven to 375ºF. Coat a casserole dish (big enough to hold 2 apples) with nonstick cooking spray.

Step 2

Peel apples halfway down from stem end. Core apples without cutting through the bottom.

Step 3

Place in casserole

Step 4

Mix ginger and butter in small bowl. Spoon half of the mixture into each apple

Step 5

Stir all remaining ingredients in small saucepan over medium heat until sugar dissolves and syrup boils

Step 6

Pour over apples.

Step 7

Bake 30-40 minutes

Step 8

NOTE: May be covered loosely with plastic wrap and done in microwave (on high about 6 minutes) and then remove plastic wrap and put apples under preheated broiler for about 2 minutes.

I used these ginger baked apples as a base for ice cream (I baked them as instructed, halved the apples, reserved the liquid, scooped vanilla ice cream into the halves, and then drizzled the reserved syrupy liquid over them). The apples were really good by themselves and absolutely ridiculously delicious with the ice cream and "syrup." Thanks, Mikekey!!!

I made this for the hubby...so it was down sized for 1...he kept saying what is that taste..but he kept eating it...and he said again...what is that taste...I finally told him it was crystallized ginger...he really enjoyed the baked apple...made for "Players Favorites" tag game...I topped it with some whipping cream and a dusting of cinnamon...

Was gifted with lovely freshly picked large great tasting apples, your recipe had me think back my mom's baked apples one,of my favorite childhood desserts! Loved the addition of the ginger and lemon, (had to improvise and make my own crystallized ginger - on my shop list) Like all the previous reviewers have said these baked apples make for one great tasting dessert!
