Step by Step Method

Step 1

Preheat your oven to 375F. In a shallow large bowl combine bread crumbs, Parmesan cheese, garlic powder, parsley, salt and pepper.

Step 2

In a small saucepan, heat butter and minced garlic or garlic powder over very low heat until butter melts.

Step 3

Brush chicken pieces with half of the garlic butter, then roll in bread crumb mixture to coat (don't throw away any leftover coating you will mix it with remaining melted garlic butter).

Step 4

Place chicken skin side up on a greased large foil-lined baking sheet.

Step 5

Mix together any remaining crumb mixture and remaining half melted butter/garlic mixture and sprinkle over chicken.

Step 6

Bake for 45 minutes or until the chicken is cooked completely.

Love this oven fried chicken, crispy on the outside, so wonderfully favorable and tender in the eating. The garlic butter perfect for garlic lovers. It's a winner and has earned a place in my recipe drawer ready to make again ... and again!

One of the best oven-fried chicken I have had in a long time. I used 6 bone in thighs for 3 of us but only crumbed the skin side and loved the idea of putting the left over crumbs in the garlic butter (no waste) and then sprinkle on top of the chicken as it gave it crunchier coating and lovely garlic punch to the taste. I baked for 50 minutes at 175C fan forced and the result was not only very tasty and flavoursome chicken but beautifully moist as well, thank you Jaquie55 for an absolute keeper.

Delicious fried chicken without all the extra calories from the oil. When I saw this recipe I thought this was going to be an easy way of frying chicken. And I needed to fry a lot of chicken tenderloins to use in chicken Parmesan. Normally I bread it and then pan fry it. Not only is it time consuming but it is also saturated in oil. So this recipe would also add more flavor to the chicken tenderloins. The chicken came out perfect. Later when I get to my Mom and Dad's house I will assemble the chicken Parmesan dish and bake the whole thing to warm it up and serve it. I will tell them all how great this recipe is as well as the new cooking method! Made for Billboard tag.
