"We recently had a short holiday in the South West of our state and twice we dined at The Highway Hotel, the first times we automatically went to order garlic bread to share as the start of our meal and the waitress strongly recommended their Garlic, Cheesy and Bacon Bread and we were so glad we did and when she came over towards the end of our meal to see if had in enjoyed the bread well I just went I am so stealing that to make myself and she said any times she goes to make it at home her boys with cheese and bacon too they really enjoy it so much. I have made this several times using different breads and toppings for the bacon and also different cheeses, for instance a mix of sharp cheddar and parmesan, mozzarella and cheddar and for the toppings I have used ham. chorizo, pancetta and salami and have enjoyed them all."

Step by Step Method

Step 1

Pre-heat broiler/grill part of the oven to 180C and put a tray in to heat up.

Step 2

Split bread lengthwise to create two sections and spread both with the garlic butter and then sprinkle the cheese on top and then put on the tray in the oven and cook for 8 to 10 minutes until cheese is bubbly and has a little colour.

Step 3

Sprinkle cooked bacon pieces on top and serve (you could also cut into one or two bite portions as an appetizer).

As others have said......this is delish. I used a combination of cheeses that I had on hand and loved the melted mozzarella on it. It was perfect with a bowl of tomato bisque. Thanks for sharing, Pat.

This bread is DANGEROUSLY delicious! I put out the bread first as I was setting the table and half of it was gone by the time I got the rest of the meal out! This is FANTASTIC. A definite keeper of a recipe that I KNOW I'll be asked to make again and again! I followed the recipe as directed, without any modifications.

Delicious! Used a combo of old cheddar and mozza and locally made smoked bacon. This was the perfect side to go with homemade veggie soup. DH raved about the addition of bacon! Thank you for sharing Pat!

This made a really good afternoon snack while I was working. We loved the combination of flavors. The only we had problems with was the time to cook. The first batch was overcooked at 6.5 minutes on broil. Next time we cooked at 350 without broiling and watched it. and it took only 5 minutes.
