"I love Asiago cheese and the flavor of it, although you can easily substitute freshly grated parmesan cheese in this recipe if needed. The cheese goes so well with the garlic, it is a perfect pair."

Step 1

Cook potatoes in boiling water for 12-15 minutes or until fork-tender; drain.

Step 2

Mash potatoes using a potato masher or ricer.

Step 3

Add the warmed milk (a little at a time to control consistency), sour cream, butter, salt, white pepper, and garlic, mixing well.

Step 4

Sprinkle in the shredded cheese and scallions, stirring until cheese starts to melt and incorporate.

I too love Asiago and use it every chance I get and when I saw it posted for potatoes I went all week in the knees just thinking about it. These did a happy dance in my mouth and my family thought they were great too!
