Step 1

Preheat oven to 300 degrees F.

Step 2

Mix all spice ingredients together with the flour and cornstarch, set aside in large bowl.

Step 3

In a medium shallow bowl, whisk the eggs with water.

Step 4

FIRST: place chicken pieces in egg mixture just long enough to get saturated (add more water if necessary). Drain,

Step 5

SECOND: coat each piece in the flour mixture.

Step 6

Deep fry in hot oil until golden brown. Finish off the chicken by baking it for about 1 hour, or until juices run clear.

Teresa had this in her Best of 2018 cookbook, so I took her recommendation and made it. I really enjoyed it. The seasoned flour was a good mix of flavors. I too only baked it for about 1/2 hour. Thanks for sharing this nice keeper.

We ate this chicken with smiles on our faces. So darn good. Crispy on the outside and tender and juicy on the inside. Great blend of spices really made this extra special for us!

I'm not sure if I would say it was close to KFC...but it's darn good...I think the cook time is off...I did my final cooking in the oven for 30 minutes...I used large chicken breast cut in half...I had extra flour mixture so I have it in my freezer to use again...this is going in my best of 2018 cookbook...
