"This is another one of those recipes that I've been making forever. I have baked it for many a holiday; baptisms, birthdays, showers, barbecues, name it - it's been there like a familiar guest. I love it when peaches are in season because it makes for a refreshing tasty dessert, but more often than not, when peaches are not in season, I use canned peaches in place of the fresh. These bars are refreshing with its cake layer on the bottom which is then covered with a cheesecake layer and then topped with peaches. It's not a heavy, weight-you-down dessert but a spring-like satisfying one. Hope you enjoy it."

Step by Step Method

Step 1

Cake Layer:

Into a bowl, sift together the flour, sugar, baking powder, and salt.

Step 3

Add the butter, combining the mixture until it resembles coarse meal.

Step 4

Add the egg, blend the mixture well and spread it onto the bottom of a 13" x 9" x 2" baking pan.

Step 5

Cheese Layer:.

Step 6

In a bowl with an electric mixer. Beat together the cream cheese, 4 tablespoons of sugar, and vanilla until the mixture is combined well.

Step 7

Add the eggs, lemon juice, flour, and salt; beat the mixture until it is smooth.

Step 8

Spread mixture evenly over the cake batter.

Step 9

Slice the peaches thin; arrange them in one layer on top of cheese/layer.

Step 10

Sprinkle top with 3 tablespoon sugar.

Step 11

Bake in a preheated 350 degrees fahrenheit oven for 20 - 30 minutes or until just golden.

Step 12

Sprinkle cheesecake with remaining 1 tablespoons sugar.

Step 13

Let cool, cut into bars.

This definitely makes a good amount if you need to feed several people. The flavors go well together. I did need to bake it quite a bit longer than the recipe stated. How much longer, I don't know. I lost track. I used canned peaches that I drained and rinsed. It worked out fine. I made this for Billboard Recipe Tag 2020. Thanks ForeverMama for the recipe.
